HACCP - Hazard Analysis and Critical Control Points System

HACCP The food and beverage supply chain is vital to public health. The HACCP (Hazard Analysis and Critical Control Points) system is a preventive approach to food safety control that reduces reliance on final product controls and establishes a more proactive, potential hazard control and prevention system. The modern HACCP system and guidelines for its use were developed by the Codex Alimentarius Commission in the Codex Alimentarius Code of Practice.

The standard is used in food production to identify potential hazards to ensure food safety in order to reduce or eliminate the risk of hazards occurring at important stages called critical control points (CCP's). The system is used at any stage of food production and preparation.
